After living in New England for 7 years and Northern Ohio for 16 years, it shouldn’t be a surprise that I love apple cider! So no matter where I live now, fall is the time to drink fresh apple cider and eat apple cider donuts. 🍁

I also use apple cider to make salad dressing this time of year. I changed up my apple cider dressing by adding hazelnuts to the recipe for the first time.

I was inspired by a fall salad served with a delicious creamy apple cider and hazelnut dressing at Oliver's on the Cape Fear in Southport, NC.

So instead of thickening my apple cider dressing with dijon or tahini, I made a creamy dressing by thickening it with hazelnuts (from Trader Joes) in a small blender.

This dressing is perfect for a fall salad. I made this salad with an autumn theme by adding pomegranate seeds, roasted butternut squash, feta, and honeyed walnuts. 🍂

Ingredients

  • 1/3 cup apple cider (not apple juice)
  • 2 tbsp white balsamic vinegar
  • ¼ cup olive oil
  • 3 tbsp hazelnut
  • ¼ tsp salt
  • ⅛ tsp black pepper

Instructions

  1. Add all ingredients to a small blender and blend until silky smooth. If you want it sweeter, add a little raw honey or maple syrup. Enjoy!
