Silken Tofu Chocolate Pudding

One of my 12 Fixes to Healthy Challenge Groups posted a yummy chocolate pudding made with tofu. I made it today for Valentine’s Day tomorrow!

I added raspberry to these puddings in the picture, but I liked this pudding best with the Strawberry Chia Sauce (see feed for recipe) I made this week.

It’s pretty intense chocolate so if you’re not a dark chocolate fan, use semi-sweet chocolate. I really like the dark chocolate however.

Silken Tofu Chocolate Pudding

One of my 12 Fixes to Healthy Challenge Groups posted a yummy chocolate pudding made with tofu. I made it today for Valentine’s Day tomorrow!

Ingredients

  • 1 cup dark chocolate chips (or semi-sweet)
  • 6 oz Silken Tofu
  • 3 tbsp cocoa
  • 1/4 cup pure maple syrup
  • pinch salt

Instructions

  1. Melt chocolate chips in a double boiler (or microwave in 15 seconds intervals).
  2. Add the melted chocolate and all other ingredients to a high speed blender and blend until smooth.
  3. Pour pudding into 4 to 6 ramekins or small bowls and refrigerator overnight (or at least a few hours).
