Need delicious soft serve “ice cream” that is made from healthy, high-protein, high-fiber foods instead of protein powder? I’ve been working on these recipes using a Ninja Creami machine for a couple of years, so it’s time I shared one of my favorites. 


Equipment needed: blender and Ninja Creami Ice Cream Maker 

Ingredients

  • 5 pitted Majool dates, soaked in very hot water for 10 minutes
  • 1 cup plain Greek yogurt
  • 1/2 cup cottage cheese
  • 1 tbsp sugar-free or regular PBfit (peanut butter powder)
  • 3 tablespoons maple syrup
  • 1 tsp vanilla paste (no need to measure)
  • 2 tbsp milk
  • 1/8 tsp coarse salt

Instructions

  1. Heat about 1/2 cup of water in the microwave. Soak pitted dates in the hot water for about 10 minutes.
  2. Add soaked dates and remaining ingredients to a blender and blend until smooth.
  3. Pour mixture into creami container and freeze overnight.
  4. Use the light ice cream setting on the Ninja Creami machine to make soft-serve style frozen dessert.
