Ingredients

  • 1 (15oz) container of Good Culture 2% fat cottage cheese
  • 2 tbsp pure maple syrup
  • 1/2 tsp of vanilla paste (optional)
  • Lemon zest of 1 lemon 🍋
  • 12 Simple Mills Sweet Thins (honey cinnamon)

Instructions

  1. Add cottage cheese, maple syrup, vanilla paste (optional), and lemon zest to a small blender or use an immersion blender to blend until smooth.
  2. Add the cottage cheese mixture to a container. Push 12 sweet thin crackers into the blended cottage cheese until they are covered. Crackers should be spread out evenly.
  3. Put a lid on the container and put the mixture in the fridge for at least 4 hours to soften the sweet thins.
  4. Top with fruit and enjoy each bite!

Notes

Pro tip: avoid over-blending the cottage cheese. Blend until smooth on lower speeds to avoid denaturing the protein in the cottage cheese.
