To celebrate National Peanut Butter Lover’s Day today I made these 3-ingredient PB cookies. 😋

I love peanut butter and anything made with peanut butter! I’ve been working on these healthier peanut butter cookies for a couple of years, because I’m so picky about my PB cookies.

Most healthier versions just don’t cut it for me. They are often dry and just not as enjoyable as a traditional PB cookie. 🍪

But it’s finally come down to this simple 3-ingredients recipe:

Ingredients

  • 1 cup natural PB (without added sugar or fats)
  • 3/4 cup pure maple syrup granules (or brown sugar, regular sugar or coconut sugar but not a liquid sweetener like maple syrup or honey)
  • 1 egg

Instructions

  1. Combine ingredients well and refrigerate for 20 minutes or longer.
  2. Using a baking sheet prepared with parchment paper, divide dough into 12 balls and place on pan. Flatten each ball and add fork marks in opposite directions on each cookie.
  3. Bake at 350 degrees F for about 8 minutes.
  4. For more then 12 cookies, decrease the time of cooking. For less than 12 cookies, they may need to cook a minute or two more.
