If you want a yummy, light, fluffy, high-protein waffle made with whole grains, look no further. These easy-to-make protein-packed waffles are made with whole-food ingredients like eggs and cottage cheese in a blender, and contain 18 grams of protein in two squares. I like to use some oat flour to mellow the taste of the whole-wheat flour. If you want a gluten-free version, use a combination of oat flour and gluten-free flour, but it won’t be as light and fluffy. The flavor and texture of this version make it the perfect waffle for everyone to enjoy!

Ingredients

  • 1 1/4 cup whole grain flour (3/4 cup oat flour + 1/2 cup spelt flour)
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 4 eggs
  • 1 cup cottage cheese
  • 1 tsp vanilla paste
  • 1 tbsp maple syrup
  • 1/4 cup milk
  • 3 tbsp safflower oil or organic canola oil

Instructions

  1. Heat a waffle iron.
  2. In a large bowl, mix together the dry ingredients and set aside.
  3. Add eggs, cottage cheese, vanilla paste, maple syrup, and milk to a blender and blend for a couple of minutes until smooth.
  4. Add the blended ingredients to the flour mixture and gently stir until combined but still lumpy.
  5. Fold oil into the batter.
  6. Spray the hot waffle iron with oil and add 1/3 cup batter to each square cavity. Close the lid of the waffle iron and cook until golden brown.
  7. Top hot waffles with berries, plain yogurt, and hot maple syrup. Enjoy!

Notes

Each waffle contains 9 grams of protein, and this recipe makes 8 squares. A serving is 2 squares for 18 grams of protein.
