Enjoy these yummy, naturally sweetened gluten-free cinnamon muffins made with oat flour and protein-packed cottage cheese. They have a nice texture and make a nice treat or addition to breakfast. Each muffin contains 5g of protein.

Ingredients

Muffin Ingredients
  • 1 cup cottage cheese
  • 2 large eggs
  • 1/2 cup pure maple syrup
  • 1/2 cup apple sauce (or 1 small ripe banana)
  • 1 teaspoon vanilla paste (or extract)
  • 1 cup oat flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp cinnamon
Crumble Topping
  • 1 -2 tbsp date or coconut sugar
  • 2 tsp cinnamon
  • 2 tbsp oats
  • 1 tbsp soft butter (optional)

Instructions

  1. Preheat oven to 350 F.
  2. In a blender or mixing bowl, add cottage cheese, eggs, maple syrup, applesauce, and vanilla, and mix until smooth.
  3. Add the flour, baking powder, salt, and cinnamon to the mixing bowl with the cottage cheese-egg mixture, and mix just until combined.
  4. Spoon half the batter into greased muffin cups. Sprinkle the crumble over the batter. Add the remaining batter and top each muffin with the remaining crumble mixture.
  5. Bake for 18 to 25 minutes until set. Let cool before removing from the muffin tins. Enjoy!
