With 12g of protein per biscuit, these gluten-free biscuits offer a yummy alternative for breakfast, other meals, and snacks. Plus, these biscuits pair well with eggs, offering you a high-protein breakfast with a yummy carb alternative. I served these at a brunch recently and was surprised how much people liked them. 

Ingredients

  • 2 eggs
  • 3/4 cup cottage cheese
  • 1 cup cheese, shredded (use one or a mixture of quality cheese like cheddar and Gruyère)
  • 2 tbsp Romano cheese, freshly grated if possible (or parmesan or nutritional yeast)
  • 2 cups almond flour
  • 1.5 tsp baking powder
  • 1/2 tsp coarse salt
  • 1 tsp seasoning (like garlic powder, onion powder,
  • or seasoning mixes)
  • Add-ins like herbs like chives, green onions, and parsley (optional)

Instructions

  1. Preheat oven to 350°F for convection bake (if available), or 375°F for bake. Line a large baking sheet with parchment paper.
  2. Whisk eggs and combine with cottage cheese and cheeses.
  3. Mix flour with baking powder and seasonings until well combined. Gently combine the dry ingredients with the wet ingredients. Add add-ins as desired. Save some of the add-ins for the top of the biscuits.
  4. Divide the dough into 10 1/4-cup portions and place on prepared sheet pans. Form rounds that resemble biscuits. Top biscuits with extra add-ons (like green onions, chives, extra cheese) for color and appeal.
  5. Bake for 20 - 25 minutes until baked through and lightly browned. Enjoy!
