One Pot Asian Noodles and Vegetables

Ingredients

  • 8 ounces brown or black pad Thai noodles or brown rice ramen noodles
  • 1/4 cup chopped red onion
  • 1/2 cup cut carrots
  • 2 cups bok choy, chopped white part & green separated
  • 1 small sliced red pepper
  • 3 chopped green onions, keep white and green parts separate
  • 2 cups sugar snap peas
  • 3 cloves or tbsp crushed garlic
  • 2 tsp sesame oil
  • 1 tbsp fresh ginger, grated
  • 1 tbsp raw honey or maple syrup
  • 1/4 cup coconut aminos or soy sauce
  • 1 - 2 tbsp garlic chili paste (to taste)
  • 2 teaspoon fish sauce
  • 4 cups vegetable stock of choice
  • lightly salted peanuts, chopped

Instructions

  1. In a deep dutch oven (or heavy bottomed pot) add all the ingredients except the green parts of the bok choy and green onions and peanuts. Stir noodles frequently until boiling.
  2. Cover and reduce the heat to low and cook for about 12 minutes until noodles are tender.
  3. Remove lid, add greens of bok choy and green onions and stir.
  4. Serve immediately topped with crushed peanuts and fresh lime.
