Don’t miss making these super easy, seriously delicious Easter eggs that are healthy too! 🐣Dates and peanut butter sort of mimic a caramel flavor.Dip these pitted dates stuffed with peanut butter in melted dark chocolate (or peanut butter shell) to make the magic happen. Then pop them in the freezer. So easy!🐰

Ingredients

  • Pitted dates
  • Dark chocolate chips
  • Coconut oil
  • Natural peanut butter
  • Pure maple syrup or raw honey

Instructions

  1. Use dark chocolate that lists unsweetened chocolate as the first ingredient rather than sugar. I use Ghirardelli 60% Cacao Bittersweet Chocolate Chips but use whatever dark chocolate you want as long as it doesn’t list sugar first.🍫
  2. To melt the chocolate in the microwave, add the chocolate chips in a microwave-safe bowl and add a little coconut oil. Melt the chocolate in 30-second increments, stirring every 30 seconds until melted to avoid burning. 🥥
  3. To make the peanut butter shell for the outer layer or to decorate the chocolate eggs, just start with natural peanut butter and add a little raw honey or pure maple syrup to taste. Warm in the microwave in 30-second increments until coconut oil is melted. Dip stuffed date into the PB mixture and let drip before adding to a lined sheet pan. 🥜
  4. Freeze the dipped dates before decorating the eggs (with a drizzle of chocolate or PB).
  5. Store in the freezer until ready to serve! Enjoy! 💜
