These fudgy brownies are so good, and they’re gluten-free and made with whole foods like sweet potato and almond butter and sweetened with maple syrup.

But no one would ever guess they are nothing but fantastic-tasting brownies.😋

Fudgy Sweet Potato Brownies

These fudgy brownies are so good, and they’re gluten-free and made with whole foods like sweet potato and almond butter and sweetened with maple syrup.

Ingredients

  • 1.5 cups cooked sweet potato (~1 large) 🍠
  • 1/2 natural almond butter
  • 1/2 cup pure maple syrup
  • 1 egg (or flax egg) 🥚
  • 1 tsp vanilla (optional)
  • 1/2 cup almond flour
  • 1/4 cup cacao or cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt (or 1/4 salt with coarse salt sprinkled on top)
  • 1/2 cup dark chocolate chips plus more to sprinkle on top

Instructions

  1. Heat over to 375 degrees F. Prepare a 9x9 baking pan or dish with parchment paper or cooking spray.
  2. Mix all the wet ingredients together with a hand mixer.
  3. Mix the dry ingredients together.
  4. Pour the dry ingredient into the wet ingredients and stir until just combined.
  5. Fold 1/2 cup chocolate chips into batter.
  6. Spread evenly in a baking dish and sprinkle the top with dark chocolate chips. Bake for 35 - 40 minutes. Let cool for at least an hour.

Notes

Pro tip: A toothpick will come out clean long before these brownies are done, so just cook them for at least 35 minutes at 375 F before you take them out and skip the toothpick test.
