4-Ingredient Date Caramel

Ingredients

  • 1 cup pitted dates (any kind)
  • 1/2 cup cashews or peanuts (or a mix of the two) or any kind of nut butter including peanut butter.
  • 1 tsp vanilla extract
  • 1/2 tsp course salt
  • 1 - 2 tbsp maple syrup to taste (optional)
  • 1/2 cup (or more) reserved date water from soaking or milk of your choice

Instructions

  1. Remove the pits from the dates, then place them in a bowl.
  2. Add nuts to the bowl too. Cover the dates and nuts with boiling water and let soak for about 10 - 30 minutes to soften.
  3. Drain but reserve the soaking water.
  4. Add drained dates and nuts to a blender along with 1/2 cup of the reserved water, vanilla, salt and maple syrup.
  5. Secure the lid and blend until smooth and creamy. If you need more liquid, add a little more reserved water. Caramel will thicken slightly when chilled, so you have room to add more liquid if needed.
  6. Serve with sliced apples. Or transfer it to an airtight container and store in the fridge for up to 5 days. Makes a little over 1 cup 🍎🍏🍎
