Blueberry Banana Whole-Grain Muffin Recipe

Ingredients

  • 1 packed cup (150g) white whole-wheat flour, Kamut or spelt wheat
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp salt
  • 1 1/4 cup mashed ripe bananas (about 3 bananas)
  • ½ cup plain Greek yogurt
  • 1 large egg
  • ½ cup maple syrup or raw honey
  • 1/2 cup unsweetened apple sauce or ¼ cup neutral oil
  • 1 heaping cup blueberries, fresh or frozen

Instructions

  1. Heat oven to 375 degrees F. Grease (with nonstick cooking spray or oil) 12 muffin tins.
  2. In a large bowl, combine the flour, baking powder, baking soda, cinnamon, and salt. In a medium bowl, mix the mashed bananas, yogurt, egg, maple syrup, and applesauce (or oil) until combined.
  3. Pour the wet ingredients into the dry and gently combine until no flour remains. Divide the batter evenly among the muffins cups.
  4. Sprinkle blueberries evenly over each muffin batter and give each muffin batter cup a quick swirl with a knife to mix the blueberries.
  5. Bake until a toothpick inserted into a center muffin comes out clean, about 20 minutes.
  6. Cool in the tin for 5 minutes and take out of cups to serve warm or cool completely
  7. Keep muffins at room temperature in an airtight container for up to 3 days or freeze for up to 3 months.
